Cereal Ice Cream Cake
Crust
- 1/2 cup sunflower seed butter
- 2 Tbsp melted coconut oil
- 1 Tbsp honey
- 2 1/3 cups lovebird cereal
Filling
- 1 can coconut cream (or full fat coconut milk)
- 1 cup ripe, mashed banana
- 1/2 cup sunflower seed butter
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 Tbsp tapioca flour (optional)
Topping
- lovebird cereal
- pumpkin seeds
- bee pollen
Instructions: (1) Line the bottom of a 9" springform pan with parchment paper, set aside (2) Make the crust: in a large mixing bowl, combine wet ingredients. Add in cereal, mixing until fully coated. Pour crust onto springform pan and firmly press down using a spatula. Freeze for 15 minutes (3) Make the filling: Add all ingredients to food processor. Pulse a few times, then blend until smooth. Pour filling over frozen crust. (4) Place toppings on filling (5) Freeze overnight (6) Defrost 20 minutes prior to cutting.
