Rice Crispy Treat Sushi
For the "No Rice" Crispies":
3 cups Eat Love Bird Cereal
1/3 cup maple syrup
1/3 cup nut butter
Pinch of sea salt
Filling:
1/4 cup cacao powder
1/4 cup maple syrup
2 tbsp melted coconut oil
Pinch of sea salt
Method:
Process the cereal, sea salt, & protein (if using) in , food processor until almost flour-like. A few chunks are okay.
Then add in the maple & nut butter, processing
until a dough forms. It should be sticky & hold together. If yours is too dry, add more maple. If yours is too wet, add more cereal/protein.
Roll it out into a rectangle on parchment paper. Combine the filling ingredients until thick & smooth. Spread over the dough.
Use the parchment paper to roll it into a log & then place in the freezer to harden. Remove, cut into slices, & enjoy!
I tossed mine in some coconut for a little extra oomph!
