Paleo Chocolate Chip Cookies with Lovebird Cinnamon Cereal

Cook Time: 10 minutes
Chill Time: 2 hours
Total Time: 2 hours, 20 minutes
Recipe:
1 1/4 cups almond flour
1/4 cup coconut flour
2 eggs, room temperature
1/4 cup grass fed butter or ghee 1/4 cup coconut oil, softened
1 tsp baking soda
1 tsp vanilla extract
1/2 cup coconut sugar
dash sea salt
1 cup dark chocolate chips
1/4 cup Lovebird cinnamon cereal
First, add butter, coconut oil and coconut sugar to a stand mixer.
Beat until combined.
Add all remaining ingredients except cereal and chocolate chips.
Stir to combine.
Gently fold in cereal and chocolate chips.
Place mixing bowl in fridge for at least 2 hours, up to 24 hours.
Once dough has chilled, preheat oven to 350 degrees Fahrenheit.
Line a baking pan with parchment paper.
Use cookie scoop to scoop balls of dough onto pan.
Place at least 2 inches apart on pan. Bake for 9 to 11 minutes or until middles of cookies are just barely set.
Finally, remove from oven.
Allow cookies to cool on pan for 10 minutes before transferring to a cooling rack.
