Banana Cream Pie with Cereal Crust - Paleo, AIP, Dairy-Free, Grain-Free, No Refined Sugar
@rooted.in.healing went 🍌 and made this divine Banana Cream Pie with a Lovebird crust!
This decadent #AIP banana cream pie uses Lovebird cereal to create a pie crust that tastes like the real deal gluten-filled graham cracker crust you grew up with. With just 10 ingredients and little added sugar, your whole family will 🙌🏻 you!
INGREDIENTS
For the crust:
3 cups of Eat Lovebird Cereal (all will work but cinnamon tastes most like graham crackers)
1 cup 🥥 flour
1/2 cup + 1 Tbsp of melted 🥥 oil or ghee
1/4 tsp salt
For the filling:
2 large ripe 🍌
1/2 cup 🥥 sugar
2 Tbsp gelatin
1 3/4 cup of full fat 🥥 milk
For the whipped topping
2 cups of 🥥 cream (refrigerate 2 cans of full fat 🥥 milk for 24 hours, Arroy D is best AIP option)
1 tsp vanilla
Optional (but delicious!) toppings:
@eatlovebird cereal
@sweetapricity caramel sauce
Sliced 🍌
DIRECTIONS:
Crust:
- Preheat oven to 350
- Place 3 cups of lovebird cereal in a food processor/blender & blend to a fine powder
- In a stand mixer, combine cereal and coconut flour, then add in melted fat. Mix until you have a formable dough that you can pinch and it stays together.
- Press the dough into a 10 inch pie or tart pan
- Bake for 8 minutes then set aside to cool
Filling:
- Next, combine the bananas and sugar in a stand mixer and get as creamy as possible
- Sprinkle gelatin over the 🥥 milk in a bowl and whisk until combined. Set aside about 15 minutes to bloom
- Place the banana mixture in a saucepan on low heat until warmed through and slightly bubbled at the sides. Add in the 🥥 milk mixture and whisk again. Keep on low heat for 1 minute then remove pour into a clean bowl and place in the refrigerator until pudding has set, about 1 hour.
- Once set, pour pudding mixture on top of crust and smooth with a silicone spatula.
Whipped topping:
Seperate the 🥥 fat from liquid, place in stand mixer with vanilla and mix until whipped. If it isn't light & fluffy, you can add 1 TBSP of 🥥 milk at a time to taste.
Add whipped topping over the 🍌 mixture & add toppings.
Store covered in the fridge for 15 minutes then slice! 😋
